Baked Oatmeal

This is my second favorite oatmeal recipe.

Steam 1 3/4 c. milk & 1 T. butter for 1-2 min. Mix in a dash of salt and 1 c. old-fashioned rolled oats. Chop and add 1/4 dried apricots, 1/2 an apple, shredded, and 1/4 c. dried cranberries. Mix to combine. Bake in a 2 qt. baking dish for 15 minutes . Remove dish from the oven and top with 3 T.+ chopped pecans and 3 T. brown sugar. Continue to bake for 10 minutes, broil on high for 5. Remove from oven and divide between 4 bowls.

Fresh vanilla whipped cream (add a bit of sugar and a bit of vanilla to your cream as it whips) with a dash of cinnamon on top is a MUST.

This recipe warranted a Ted standing ovation. I liked it a lot. Try it. You may enjoy it!

In addition to his standing ovation, Ted must have given a speech. Or she's used to people coming up to her dad and telling him he gives good talks.
